VINIFICATION: Late harvest. After the de-stemming, the grapes macerate and ferment at controlled temperature for about 10 days in vertical vats. Racking, pressing and decanting occur in stainless steel tanks.
ORGANOLEPTIC CHARACTERISTICS: Cabernet Franc Villa Caratti lends itself to aging. With an intense ruby red colour and purplish hints when young, changes to a nice garnet colour when matured. Intensely scented of violet and raspberry, slightly herbaceous. In the mouth it is full, firm, round and armonic.
FOOD PAIRING: Strong wine that matches well with roasts and game, sausage and hard cheese.
