VINIFICATION: The grapes are harvested by hand. In the third week of September they are placed in the drying-room, according to the traditional “appassimento”, until March. After the crushing, the must macerates and ferments spontaneously at controlled temperature for about 20 days in vertical vats. After the racking off and the pressing, it refines in steel refrigerated tanks for 36 months.
ORGANOLEPTIC CHARACTERISTICS: A deep ruby red colour with purple highlights accompanies an intense crispy cherry bouquet and nice hints of vanilla and balsamic. Fully-flavoured, the sweetness of blueberries is perfectly balanced by the presence of light and soft tannins. Voluminous and vigorous, it shows off a strong sweet flavour and a refreshing acidity, kept throughout the whole aging process.
FOOD PAIRING: Great for meditation, it is the best match for chocolate desserts, shortcrust pastry and almond-based recipes. It pairs well with seasoned and fermented cheese.
